I have fond childhood memories of visiting an older neighbor lady who would always serve me (and my sisters) delicious lace cookies. They were such a delicacy, and I am excited to be sharing her lace cookie recipe and other Christmas cookie ideas from several designer friends!

Lace Cookie Recipe & Other Christmas Cookie Ideas

It has probably been at twenty-five years since I last ate a lace cookie (am I really that old)?! When I was trying to think about a cookie recipe to share today, I remembered Mrs. Weihe’s special desert and reached out to my mom to see if knew how to make the cookies, and I was excited to find out my mom had Mrs. Weihe’s recipe – written in her own handwriting.

The are fairly easy to make, and a little goes a very long way.

The ingredients are probably things you have on-hand in your kitchen, so they don’t require a lot of effort.

I dropped mine by 1/2 tablespoons full, and they spread from the small little balls…

…into a thin, crispy delicacy.

I obviously had a much sweet tooth back in the day, because these cookies are very sweet. However, one bite took me back to my childhood and memories of sitting in Mrs. Weihe’s home.

Here’s what you’ll need:

1 stick of butter
1 1/2 cups quick oats
1 cup white sugar (some recipes call for brown sugar, but I prefer the taste of the white sugar and the lighter cookies).
1 tablespoon flour
1 teaspoon baking powder (I skipped the baking powder)
1 egg
1 teaspoon vanilla

Lace Cookies

Melt 1 stick of butter.
Melt the butter on low in a pot. Once completely melted, removed from heat.
Add 1 1/2 cup quick oats.
Using a wooden spoon, mix the oatmeal and butter.
Add 1 cup white sugar, 1 tablespoon flour, and (optional) 1 teaspoon baking powder.
Mix in the additional dry ingredients.
Add a beaten egg and 1 teaspoon vanilla.
Mix in the egg and vanilla.
Once all the ingredients are mixed, cover a cookie sheet with foil. Drop cookie mix by 1/2 tablespoon.
When covering the cookie sheet with foil, keep the dull side up. Make sure to leave plenty of space between the cookies because they will spread.
Bake at 375 for 10 minutes.
You will need to adjust the time depending on the size of your cookies. Make sure they are a golden brown before removing from the oven.
